BLT Chicken Salad

The worst thing about trying to eat healthy is when you hate what your eating. I refuse to eat for the sake of eating, flavour and satisfaction is EVERYTHING. Luckily with keto you are able to eat full fat which definitely helps with flavour. I whipped up this salad and I was so impressed with the flavours I actually ended up making it 3 days in a row for lunch. I hope it will be one of your go to salads too!



Ingredients

  • 4-5 leaves of romaine lettuce, chopped

  • 1 chicken breast, cooked and diced

  • 1 tbsp olive oil

  • 2 tbsp Nando's peri peri hot sauce

  • 2 strips of bacon, cooked and chopped

  • 2 green onion, chopped

  • 1/2 medium tomato, chopped

  • cheddar cheese to taste (as little or much as you like)

  • 1/2 yellow bell pepper, chopped

  • handful of pumpkin seeds and sunflower seeds

  • 2 tbsp Caesar salad dressing (look at the nutritional label to make sure you are choosing a dressing that does not have any added carbs and sugar, I use PC Blue Menu Caesar Dressing - comes in a glass jar)

Here's how do it:

1. Wash romaine lettuce in cold water, and chop

2. Wash and chop your vegetables: green onions, tomato, bell pepper

3. Dice chicken breast in cubes, add olive oil to frying pan at medium heat, cook chicken breast. Once chicken is almost cooked through add in your nando's peri peri hot sauce.

4. While chicken is cooking, cook your bacon (I like to use my air fryer for this for easy clean up, 8-9 mins at full temperature but you can also pan fry it as well). Once cooked, chop up your bacon

5. Assemble your salad, starting with the romaine lettuce, vegetables, chicken, bacon, cheddar cheese, top with pumpkin seeds and sunflower seeds, mix well with dressing

6. You can also add salt and pepper to taste
