Cauli- Fried Rice

Cauliflower rice is a great way to still enjoy traditional dishes that are full of carbs without compromising on flavour. I'm usually not a big fan of cauliflower but I was pleasantly surprised when I found this easy, low carb option. Trust me you won't even know your eating a vegetable. You can buy this in the frozen food section at most grocery stores or easily shred your own using ahead of cauliflower and a food processor.

Ingredients:

  • 1 tbsp ghee

  • 1 cup of cauliflower rice

  • 1 cup chopped veggies of your choice (I like mushrooms, green bell peppers, onion, and tomato)

  • 1 cup egg whites

  • green onion and cilantro to garnish


Here's how to do it:

  1. Heat a non-stick frying pan to medium-high heat, add ghee.

  2. Sautéed your chopped veggies for 1-2 minutes.

  3. Add in your cauliflower rice, cook until all the moisture cooks off.

  4. Add in egg whites and cook through

  5. Season with salt and pepper to your desired taste.

  6. Remove from pan, and garnish with green onions and cilantro (optional, but it gives the dish a fresh taste).

  7. You can also add some sugar-free ketchup on top.
