Keto Banana Nut Muffins

This shit is BANANAS B-A-N-A-N-A-S. No bananas were used during this recipe, believe it or not, banana extract is the secret to get that real banana flavour here. I also threw in stevia sweetened chocolate chips for that extra satisfaction. These are great little snacks in between meals and if your not like me and aren't fasting, they are the perfect addition to your morning coffee. One thing I would recommend is investing in a food scale, it just makes everything 10x easier and more accurate.


Here's how to do it:

  1. Preheat your oven to 350 Degrees

  2. Measure out the walnuts on a food scale, crush them into tiny pieces using a rolling pin, and set aside for later

  3. Now cut up butter into small pieces, add it to a bowl, and microwave it until melted (around 30 seconds – 1 minute, do it in increments unless you want a explosion in your microwave)

  4. While the butter is melting, add the eggs into a large bowl and whisk them until the yolks combine into the whites (I use my KitchenAid for this part)

  5. Once that’s taken care of, add the butter and the rest of the liquid ingredients into the bowl

  6. Whisk all of the ingredients until they’re combined, and set them aside

  7. In another larger bowl add all of the dry ingredients (except the walnuts) and whisk them until combined

  8. When they’re combined, add the wet ingredients into the dry and fold them into one another until a thick batter forms

  9. Now add 1/2 of the walnuts into the batter, and mix/fold again. This is the time to add in the chocolate chips if you choose to

  10. Add paper liners to a 12 slotted muffin tray

  11. Add the batter to the slots - note this recipe should make 12 muffins

  12. Top each muffin with the left over walnuts, and bake for 25-30 minutes

  13. Let the muffins cool in the tray you baked them in. Store in a air tight container in the fridge and enjoy for several days
